Pickled mustard tuber sorting machine

Zhacai was first seen in Fuling, Sichuan, China (now Fuling District, Chongqing) in 1898, and was called "Fuling Pickled Mustard" at that time.

In fact, the term "Zhacai" is a general term for the raw materials and finished products of pickled mustard tuber. Its raw material should be called green cabbage head, and its scientific name is "stem mustard", which is one of the three variants of stem mustard. The other two variants, bamboo mustard and sprout mustard, are also widely planted in Sichuan and Chongqing, commonly known as Bangcai and Ercai respectively.

The mutated green cabbage head has a particularly swollen and fat stem near the ground, which is nearly spherical, so it is called "stem mustard".
