How to process the eddoe
Eddoe is a tropical root vegetable closely related to taro, that is cultivated for its starchy corms and edible leaves. Native to tropical and some subtropical regions of Asia and Oceania, it has an earthier slightly sweeter, and nuttier flavor. Size varies depending on the variety, with diameter generally ranging from 3-7cm, and weights ranging from 50g to 2000g.

Recently we received an inquiry from Ecuador about eddoe processing machinery. The customer checked our video of sweet potato processing line on YouTube and felt that it was very suitable for their eddoe. Since the taro is quite dirty after harvesting from the soil by workers, our bubble washing tank is designed with a bottom of tank cleaning function to prevent the bottom of the tank from clogging due to excessive dirt. The soft brushes during the conveyor process won't damage the eddoe skin.

However, our customer thinks that because the rough skin is harder to dry, there's no need to worry about drying. After natural air drying, we will add a heart dryer with a maximum temperature of 45 degrees, fueled by diesel or natural gas. This will make the drying process more stable and effective, ensuring that products like sweet potatoes and taro, which are difficult to air dry, are completely dried. The customer can also add a sorting machine, the packaging table at the sorting machine's exit will make it easier for workers to pack the eddoe.
