How lychee are harvest and processed in China

This year, “GUIHUAXIANG”Lychee went on the market at the end of March. These lychees are mainly planted in Hainan province China, which is also the main producing area of lychee in China.

The harvest season has not yet begun in other production areas across China and the market supply is less than 10%. In this way, lychee can be sold at a high price at the end of March.

 

Lychee is mainly picked up in the early morning or evening, avoiding high temperature periods to reduce fruit respiration and water loss. And people will also choose sunny days for picking to avoid rotting caused by rain. During the picking process, people will use special scissors to cut the fruit stalks, leaving about 0.5-1 cm of the fruit stalks, and avoid direct pulling and damaging the peel.

 

The next step after picking is a cooling process. During this process, people will soak the litchi in ice water (0-5℃) for 10-15 minutes within 1-2 hours after picking to quickly reduce the fruit temperature and inhibit enzyme activity. Cold storage precooling: If it cannot be processed immediately, it needs to be transferred to a cold storage (4-5℃) for temporary storage, but not more than 12 hours.
