The Science and Machinery Behind Premium Sweet Potato Grading

As a globally popular root vegetable, sweet potatoes require a professional processing line to ensure quality, appearance and taste from harvest to market. FstSort, a professional fruit and vegetable machinery manufacturer has developed an integrated sweet potato washing, roller grading, packing and conveying line, paired with professional post-harvest preservation technology, winning high recognition from Hawaiian clients.

FstSort’s sweet potato line features targeted modules for gentle, efficient processing: It starts with an elevator that transports sweet potatoes to the cleaning section, which combines bubble cleaning, brush scrubbing and high-pressure spray to remove impurities without damaging the skin. Next, a dual-drying system (natural air + hot air) dries the surface thoroughly, avoiding water impact on subsequent steps.

The key sorting module includes a manual selection table with two defective fruit belts—workers pick unqualified sweet potatoes per customer-defined standards. Qualified ones enter the roller grading unit, which sorts them by diameter into uniform grades for packing. Packed cartons are then conveyed for further cold storage and packaging.

3. Value Addition: Temperature Management

For premium markets, processing doesn't end at sizing. True quality lies in post-harvest physiology. FstSort integrates its lines with two critical temperature management strategies:

High-Temperature Curing: After grading, we recommend placing sweet potatoes in a 30°C (86°F) environment. This "curing" phase kills surface pathogens and encourages rapid healing of minor abrasions, forming a protective layer that dramatically extends storage life.

Low-Temperature Sugar Curing: Following healing, the temperature is lowered to 12-15°C (54-59°F) . This initiates a natural starch-to-sugar conversion, actively enhancing sweetness and flavor. This ensures consumers receive a product with superior taste and texture.
